Ingredients
- 57g wholegrain toast, multigrain or rye bread
- 2 large eggs, hard-boiled, peeled, and chopped
- 20g light lacto free spread cheese
- 1/2 tsp mustard
- 1 tsp light lacto free mayo
- 1 tablespoon chopped green onion or chives
- 5x cherry tomatoes
- 100g spinach ( steamed ) add 5g butter
- Pinch of salt & pepper
Steps
Chopp eggs into small pieces, add mayo, spread cheese, mustard, onion, salt and pepper. Steam spinach, add butter , salt and pepper. Sauté cherry tomatoes for 3 minutes.
