Toasted bread with egg salad and smoked salmon

Ingredients

  • 57g wholegrain toast, multigrain or rye bread
  • 2 large eggs, hard-boiled, peeled, and chopped 
  • 20g light lacto free spread cheese
  • 1/2 tsp mustard
  • 1 tsp light lacto free mayo
  • 1 tablespoon chopped green onion or chives
  • 5x cherry tomatoes
  • 100g spinach ( steamed ) add 5g butter 
  • Pinch of salt & pepper

Steps

Chopp eggs into small pieces, add mayo, spread cheese, mustard, onion, salt and pepper. Steam spinach, add butter , salt and pepper. Sauté cherry tomatoes for 3 minutes.
