Grilled chicken with sweet potato and butternutsquash puree

For 2 servings you will need:

  • 240g chicken breast
  • 200g sweet potato
  • 200g butternut squash
  • 1 tbsp olive oil
  • ½ Red onion 

Steps

First, preheat the oven to 220 degrees. Then, peel the squash and cut it up into small cubes together with sweet potato and onion. Drizzle extra virgin olive oil over the veggies cubes and toss them to thoroughly coat it in the oil. Sprinkle with salt, pepper, the herbs, paprika and garlic powder. Cut the chicken into  2  – 120g pieces , sprinkle with salt, pepper & chicken seasoning and place onto the baking tray together with veggies.

Transfer the veggies to the oven and let it bake for 20-25 minutes or until tender and starts to brown on the edges.

Once they are baked, mix the veggies in food processor to make a puree. Place puree on the plate and top it with the chicken.
